Sweet and Sour Chicken

Ingredients

2 whole chicken breasts

¼ cup vinegar

4 cups water

1 large onion

1 teaspoon garlic

6 slices pineapple

1 cup mushroom

1 small carrot

1 teaspoon salt

¼ teaspoon black pepper

3 tablespoons vegetable oil

1 teaspoon soy sauce

2 tablespoons vinegar

½ cup chicken stock

Directions

Remove all bones from the chicken breast, cut in small cubes or strips, rinse in ¼ cup vinegar and 4 cups of water solution.

Chop finely, the onion and garlic, chop coarsely the pineapple and mushroom, then dice the carrot.

Season chicken with salt and pepper.

In a wok, heat vegetable oil, add half of the garlic and sauté for 1 minute.

Add chicken and continue to stir constantly. As soon as chicken is cooked, add the following: pineapple, chicken stock, carrot, mushroom, vinegar, sugar and soy sauce.

Add the leftover garlic and onion and cook for an extra10 minutes.
